Sloppy Joes

This is pure comfort food.  We make is so many times, we don’t need to look at a recipe.  It’s super easy and quick.  We like to eat it open face on a bun with melted shredded cheddar cheese on top.  My favorite buns are the deli thins.

Ingredients

  • 138 Grams
    onions, minced (12g carbs, 2g fiber)
  • 134 Grams
    red pepper, minced (8g carbs, 3g fiber)
  • 120 Grams
    green peppers, minced (6g carbs, 2g fiber)
  • 90 Grams
    mushrooms, minced (3g carbs, 1g fiber)
  • 1 1/2 Pound
    ground beef (0g carbs, 0g fiber)
  • (15 ounce) can tomato sauce (28g carbs, 7g fiber)
  • 2 Tablespoons
    tomato paste (1g carbs, 0g fiber)
  • 2 Tablespoons
    worcestershire sauce (6g carbs, 0g fiber)
  • salt and pepper to taste

Instructions

  1. Mince onions, red pepper, green pepper and mushrooms and set aside

  2. Add a little oil to a pan and brown ground beef

  3. Strain beef and discard all the dripping except a few tablespoons. Salt and Pepper to taste. Set the beef aside.

  4. place veggies in pan and sauté for about 5 minutes.

  5. Add drained ground beef, tomato sauce, tomato paste and worcestershire sauce and cook for about 5 minutes over low heat.

  6. Toast bun and open both sides. Spoon 250 grams over buns. Top with cheddar cheese and microwave for about 15 seconds.
