We basically did the recipe shown with minor changes.  It’s a delicious Greek-Style Burger filled with Feta Cheese.  There is no need for condiments as the Feta Cheese makes this burger juicy.  You can do the burger without a bun, or, for a few more carbs, use a toasted Deli Thin.

Ingredients

  • 1 Pound
    ground chicken
  • 1/2 Cup
    dry bread crumbs (40g carbs/2g Fiber)
  • egg
  • 1 Tablespoon
    lemon juice (1g carbs/0g fiber)
  • 20 Grams
    chopped sun-dried tomatoes (11g carbs/3g fiber)
  • 1/2 Tablespoon
    dried basil
  • 1/2 Tablespoon
    dried oregano
  • salt and pepper to taste
  • 40 Grams
    crumbled feta cheese (2g carbs/0g fiber)

Instructions

  1. Mix the chicken, bread crumbs, egg, lemon juice, sun-dried tomatoes, basil, oregano, salt and pepper in a bowl. This will create about 640 grams of mixture.

  2. Separate into 8 80 gram patties.

  3. Take one 80 gram patty, add 10 grams of crumbled feta cheese to the center. Top with a second 80 gram patty and seal the sides. Do this 3 more times.

  4. Cook until the burgers until the burgers are no longer pink. It should take about 6 minutes on each side. The inside temperature should be 165 degrees.

  5. (optional) Toast one Deli Thin for each burger. Add a piece of lettuce and top with the burger.
