I love mashed potatoes.  I just hate all the carbs involved.  Here is a recipe that uses potatoes and parsnips to cut the number of carbs.  It also adds a nice sweetness to the end result.  I’ll bet your kids won’t even know.  I use a mixer in this recipe — you can use a potato masher if you like chunky mash.

Ingredients

  • 500 Grams
    Potatoes (85g carbs, 11g fiber)
  • 300 Grams
    parsnips (54g carbs, 15g fiber)
  • 2 Tablespoons
    butter (0g carbs, 0g fiber)
  • 3/8 Cups
    whole milk (5g carbs, 0g fiber)
  • 3/4 Cups
    shredded Parmesan cheese (3g carbs, 0g fiber)

Instructions

  1. Scrub unpeeled potatoes, cut into chunks. Peel parsnips, cut into chunks. Cook unpeeled potatoes and parsnips chunks in a large saucepan, in boiling water about 20 minutes or until they are tender. Drain.

  2. Using a hand mixer, mash potatoes and parsnips. Add butter and milk and mix until light and fluffy. Stir in cheese.

Nutrition: Per 100 gram servings: 121 calories, 15 grams carbs, 3 grams fiber, 12 net carbs
