Lentil and Sausage Soup
PrintWe didn’t do a great job in this soup — way too many carbs. But, you can see how we setup our soups and calculate the carbs. I still had this soup for lunch — just without crackers. You can top it with a little parmesan cheese. We make the soup and try to equally divide into 8 or 9 screw-top containers. We just grab 2 soups as we dash out of the house in the morning.

Rinse lentils and dump in crock pot.
Remove sausages from the casing and cook over medium heat until brown. Drain any excess oil and add to crock pot.
Add onions, celery, carrots, garlic, zucchini and diced tomatoes to the crock pot.
Add garlic powder, bay leaves, dried oregano, thyme, basil, salt and pepper.
Cover the crock pot and set to cook at high for 4 hours.
(optional) Take one cup of the finished soup and puree in a blender for a few minutes. Stir back into the soup.
Divide equally into 8 soup containers. Refrigerate.
