I love mashed potatoes. I just hate all the carbs involved. Here is a recipe that uses potatoes and parsnips to cut the number of carbs. It also adds a nice sweetness to the end result. I’ll bet your kids won’t even know. I use a mixer in this recipe — you can use a potato masher if you like chunky mash.

Scrub unpeeled potatoes, cut into chunks. Peel parsnips, cut into chunks. Cook unpeeled potatoes and parsnips chunks in a large saucepan, in boiling water about 20 minutes or until they are tender. Drain.
Using a hand mixer, mash potatoes and parsnips. Add butter and milk and mix until light and fluffy. Stir in cheese.
Nutrition: Per 100 gram servings: 121 calories, 15 grams carbs, 3 grams fiber, 12 net carbs
